Welcome to our summer edition of the Endlessly Organic newsletter. We have been quite busy over the past few months working diligently to
add new locations, enhance our Web site, train new staff, host
educational programs and so much more.
In this newsletter, read about our successful Veggie
Boot Camp which took place in May. Also take a look at Part I of our

Veggie Boot Camp Success!

In May, Endlessly Organic and Johnson and Wales University sponsored a member's only Veggie Boot Camp. Instructors from Johnson and Wales shared knife skill techniques. As a special treat, Barbara Kamp, a J&W instructor and registered dietician provided a nutritional overview of the menu items and discussed the art and science of preparing healthy, low fat, tasty food. The Farm Bill, Part I: Shaping America's Food Industry Standards
The farm bill, or as some call it the food bill, is a legislation that affects every American. Renewed every five years, the farm bill shapes our entire food system. Roosevelt's New Deal included the farm bill to restore the farming system in response to overproduction and unemployment problems. The current farm bill has ballooned into a $412 billion safeguard, distributed among various programs and policies, such as nutrition, subsidies, and conservation.
In today's newsletter we are going to take a look at nutrition, the biggest piece of the pie at $314 billion (76% of total spending). This money supports food stamps, school lunches, and other low-wage supplements. Today, 43 million people are enrolled in the food stamp system, and nearly half are poor children. Food stamps average about $4.50 a day, which is $1.50 a meal, and usually run out by the 2nd week of the month. This leads us into the next issue: America's diet.
Today's farm policy has directed food industry investors to use inexpensive ingredients in processed foods. Americans are now consuming excessive amounts of added sweeteners and oils. What it boils down to is that less expensive crops are being manufactured into cheap, unhealthy foods such as hydrogenated vegetable oils and high fructose corn syrup, which can lead to obesity. Obesity costs Americans $120 billion per year. Products that did not even exist a few generations ago are now widely used as additives and substitutes thanks to artificially cheap corn and soybeans. This leads us to the next piece of the pie, farm subsidies. Stay tuned for the next newsletter to read more about it!

Carol Brooks, Founder of ABC Grow
As Co-Founder and President of Continental Real Estate Companies (CREC) Carol G. Brooks, has led and guided CREC in becoming Florida's leading full service real estate firm. Brooks provides both strategic and tactical oversight of CREC's vertically integrated company. She has received numerous awards and accolades for her professional and civic accomplishments.
Ms. Brooks received her Bachelor of Arts Degree at the University of Miami. She is currently on the Bristol Bank Board of Directors, the United Way of Dade County Board of Directors and Board of Trustees. And, of special note, Ms. Brooks is also involved on the Board of Governors at the University of Miami Sylvester Comprehensive Cancer Center and is founding chairman of the Friends for Sylvester Executive Board.
Most recently, Ms Brooks founded ABC Grow, a program model with a simple mission: to explore and quantify how an organic garden based education can support Florida's academic content standards through a cohesive educational component delivered to children from their earliest years through primary school. Physical wellness, science, math, art and personal accomplishment are among the skills children will acquire through ABC Grow. In conjunction with the United Way Center for Excellence in Early Education, ABC Grow is creating the program model to provide educational standards, garden installation and maintenance plans and funding so many schools in our community can participate in and benefit from organic gardening.
Carol is also the founder of A Deeper Breath, and organization aimed at creating a "balanced union of Mind, Body and Business." Carol was recently featured in the Miami Herald.
